Hearty Veggie Lasagna

Hearty Vegetable Lasagna
Ingredients
2 Jars Alfredo Sauce
2 pkg Chopped Spinach, Thawed
1 pkg Chopped Broccoli, Thawed
1 med chopped onion or 1/3 c. dried minced onion
1 sm bag baby carrots chopped
1 pkg sliced mushrooms
1/8 tsp Garlic Powder
15 oz. Ricotta Cheese
2 Eggs
2 c. Grated Parmesan Cheese
2-4 c. shredded mozzarella cheese
1 tbsp Basil 1 tbsp Parsley
1 tsp Olive Oil
1/2 tsp salt & pepper
1 pkg Oven Ready Lasagna Noodles

Tools
9x13 Baking Dish
Tin Foil
Measuring Devices
Mixing Bowl & Spoon
Large Pan
Knife and Board or slicer

Making the Sauce
In a pan, add the olive oil, cook the onions, carrots and broccoli until onions are cooked, ad the parsley, basil, salt, pepper, garlic powder then add alfedo sauce, then add 1 package of spinach to the sauce, let the sauce simmer for 15 mins

Make The Ricotta Mixture
In a mixing bowl take the ricotta cheese, ½ c. Grated Parmesan Cheese, ½ c. Shredded mozzarella cheese, and 2 eggs, mix these ingredients together

Assemble The Lasagna
Coat the bottom of the 9x13 pan with cooking spray, lay down a layer of noodles, drop some of the ricotta mixture on the noodles, add some sauce, add mozzarella cheese, repeat this process until no more ingredients Bake at 350 for 45 mins covered, uncover add remaining cheese if any and bake
uncovered for 15 more mins
