Hearty Veggie Lasagna
Hearty Vegetable Lasagna
Ingredients
2 Jars Alfredo Sauce
2 pkg Chopped Spinach, Thawed
1 pkg Chopped Broccoli, Thawed
1 med chopped onion or 1/3 c. dried minced onion
1 sm bag baby carrots chopped
1 pkg sliced mushrooms
1/8 tsp Garlic Powder
15 oz. Ricotta Cheese
2 Eggs
2 c. Grated Parmesan Cheese
2-4 c. shredded mozzarella cheese
1 tbsp Basil 1 tbsp Parsley
1 tsp Olive Oil
1/2 tsp salt & pepper
1 pkg Oven Ready Lasagna Noodles
Tools
9x13 Baking Dish
Tin Foil
Measuring Devices
Mixing Bowl & Spoon
Large Pan
Knife and Board or slicer
Making the Sauce
In a pan, add the olive oil, cook the onions, carrots and broccoli until onions are cooked, ad the parsley, basil, salt, pepper, garlic powder then add alfedo sauce, then add 1 package of spinach to the sauce, let the sauce simmer for 15 mins
Make The Ricotta Mixture
In a mixing bowl take the ricotta cheese, ½ c. Grated Parmesan Cheese, ½ c. Shredded mozzarella cheese, and 2 eggs, mix these ingredients together
Assemble The Lasagna
Coat the bottom of the 9x13 pan with cooking spray, lay down a layer of noodles, drop some of the ricotta mixture on the noodles, add some sauce, add mozzarella cheese, repeat this process until no more ingredients Bake at 350 for 45 mins covered, uncover add remaining cheese if any and bake
uncovered for 15 more mins

Cooking With Chris - Low Fat Lasagna
Here it is Cooking with Chris number 38 a Low Calorie Lasagna, it is a very tasty and easy recipe and make plenty so there will be leftovers for meals later on
Ingredients
1/3 c. or more Dried Minced Onions
1/4 tsp. Garlic Powder
1 tablespoon olive oil
1 (46 ounce) jar other pasta sauce
1 lb lean ground turkey
16 ounces part-skim ricotta cheese
12 ounces fat free mozzarella cheese , shredded
1/4 cup Parmesan cheese , grated
2 Egg Beaters egg substitute
1 (1 lb) package Oven Ready Lasagna Noodles

- In a large saucepan, cook ground turkey, onion & garlic using the olive oil. Add sauce and simmer 15 minutes.
- In a medium sized bowl, mix ricotta,1 cup mozzarella, all of Parmesan and the egg-stirs.
- In 9x13 baking dish, coat the bottom of the baking dish with cooking spray, layer noodles, ricotta cheese mixture, sauce, and a little mozzarella cheese. Repeat the Layers until out of ingredients.
- Cover with foil sprayed with cooking spray and bake at 350 F for 45 minutes
- Uncover, top with remaining mozzarella, Bake 15 minutes.
- Sprinkle some Parmesan on top, let cool down for 15 minutes, and Enjoy your delectable, meal, with plenty of leftovers to boot!
